corn on the cobTrying new dishes is something Pierrette & I agree is the most fun in Eating For Energy. We eat old food types in new and incredible ways. We are so a-typical as a society that eating junk is more of a habit than we know.

Last night I had corn on the cob, in a salad, uncooked and it was one of the most delicious meals I have ever had. Who would think of eating corn, right of the cob, uncooked, raw? I never would of thought of that. We all are use to eating it well cooked until it smells(mother and grandmother told us that),using as much butter and salt as possible, and eating until our gut hurts,right?

Yuri and Amy have taught me that eating food raw means to eat it the way it is intended. That only means to eat it without cooking it. Just eat it like eating an apple off the tree. Eat it like having carrots just pulled out of the ground or fresh pineapple from Hawaii, great.

My mouth waters just thinking of the great tastes Pierrette & I have discovered. Yes, I mean discovered, because we never ate any or most of our foods in their natural state. This is an incredible discovery for us. We are 58 and having great tasting foods everyday and enjoying it like children at Disneyland!

I could talk forever about how we feel, but taste it instead and tell us what you think. Here is the recipe:

Mexican Salad

Serves 2

2 corn on the cob

1 tomato,cubed

1 avocado,cubed

1 red pepper,cubed(not too big)

1/2 cucumber,cubed

1. De-cob corn using a knife, chop up additional ingredients bite size and add to a medium bowl.

2.Top with dressing of choice(I like the Simple Vinaigrette).

Simple Vinaigrette

Makes 1/4 cup

2-3 tbsp olive oil

1 tbsp apple cider vinegar(the real stuff)

Juice of 1/2 lemon

Pinch of ground black pepper

Pinch of sea salt

1. Using a fork, whisk all ingredients in a cup and pour over salad.

Eating great tasting foods as this should be done in as much secrecy as possible. If you tell too many people it will spread so quickly and we will all be eating this way.
